(2 minutes)

Whisk constantly over simmering water until the mixture reaches 160°F (71°C) and the sugar is completely dissolved. This should take about 5-7 minutes. (5-7 minutes)

Remove from heat and beat with an electric mixer on high speed for 5-7 minutes, or until stiff, glossy peaks form and the bowl is cool to the touch. (5-7 minutes)

Beat in the vanilla extract. (1 minute)

Immediately spread the meringue icing over the cooled cake layers. Garnish with grated orange zest and toasted chopped walnuts. (5 minutes)

For an extra moist cake, brush the cooled layers with a simple orange syrup (equal parts orange juice and sugar, heated until sugar dissolves) before frosting.
Ensure the egg whites for the meringue are at room temperature for best volume.
To toast the walnuts, spread them on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or until fragrant.
If you don't have a double boiler, use a heatproof bowl set over a simmering pot of water, making sure the bottom of the bowl doesn't touch the water.
