Cover the Dutch oven and place in the preheated oven. Braise until chicken is falling off the bone and the juices run clear, 1 1/2 to 2 hours. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). (90-120 minutes)

For an even richer flavor, use bone-in, skin-on chicken thighs instead of leg quarters.
If you don't have San Marzano tomatoes, you can substitute with another high-quality canned crushed tomato variety.
Adjust the amount of red wine to your preference. A dry Chianti or Sangiovese works particularly well.
Cacciatore translates to 'hunter' in Italian, and traditionally includes game meats like rabbit. Feel free to substitute chicken with rabbit or another game bird for a more authentic flavor.
This dish tastes even better the next day, as the flavors meld together. Store leftovers in an airtight container in the refrigerator for up to 3 days.
