Stir in tomato paste, paprika, cumin, cayenne pepper, and black pepper. Simmer for 5 minutes to allow the flavors to meld. (5 minutes)

Gently mix the cooked millet, cilantro, and feta cheese into the ground beef mixture. (5 minutes)

Spoon the mixture generously into the prepared red bell peppers. Place them in the greased baking dish. (10 minutes)

Bake in the preheated oven until the peppers are slightly tender, about 15-20 minutes. (20 minutes)

Replace the tops back onto the peppers; bake for an additional 10-15 minutes, or until the peppers are tender to your liking. (15 minutes)

For a vegetarian option, substitute the ground beef with lentils or crumbled tofu.
Feel free to experiment with different cheeses! Goat cheese or a sharp cheddar would also be delicious.
If you don't have fresh cilantro, dried cilantro can be used, but use half the amount.
To save time, cook the millet ahead of time.
For a smoky flavor, roast the bell peppers over an open flame or under the broiler before stuffing.
