Place bacon in a skillet over medium heat. Cook until brown and crisp, rendering the fat. Remove bacon from skillet and drain on paper towels, reserving 1 tablespoon of bacon fat in the skillet. (10 minutes)

Return the skillet with the bacon fat to medium-high heat. Add the diced onion and minced garlic, sautéing until the onion is translucent and softened, about 3 minutes. Add the balsamic vinegar, deglazing the pan and stirring for one minute until slightly reduced. Add the chopped mushrooms, cooking for an additional 3 minutes until softened and lightly browned. Remove pan from heat and set aside to cool slightly. (10 minutes)

Finely chop 4 slices of the cooked bacon (reserving the remaining 4 slices for topping). In a medium bowl, combine the chopped bacon, ground beef, panko bread crumbs, Italian seasoning, grated Parmesan cheese, mushroom mixture, and lightly beaten egg. Mix gently with your hands until just combined; avoid overmixing. Season generously with sea salt and freshly ground black pepper. Form into two evenly sized patties. (10 minutes)

Open the two halves of the hamburger bun on an ungreased cookie sheet. Place one beef patty on each half. Top each patty with one slice of tomato, 2 slices of the reserved crispy bacon, and one slice of Swiss cheese. (5 minutes)

Bake in the preheated oven for 20-25 minutes, or until the meat is cooked through and the cheese is melted and bubbly. A meat thermometer inserted into the center of the patty should read 160 degrees F (71 degrees C). (25 minutes)

For an extra layer of flavor, toast the hamburger bun halves lightly before assembling the burgers.
Use high-quality balsamic vinegar for the best results; a thicker, aged balsamic glaze will also work beautifully.
Feel free to experiment with different types of cheese, such as Gruyere, provolone, or even a sharp cheddar.
To add a touch of freshness, top with some fresh arugula or baby spinach after baking.
