Follow The Directions

Heat 1 tablespoon of olive oil in a large skillet over medium heat. (2 minutes)

Add the onion, bell peppers, jalapenos, and garlic and cook until softened, about 5-7 minutes. Stir in the black beans and cilantro and cook for another 2-3 minutes until heated through. (10 minutes)

In a separate bowl, whisk together the eggs, milk, and 1/2 cup of the shredded Mexican cheese. (1 minute)

Heat the remaining 1 tablespoon of olive oil in another large skillet over medium heat. Pour in the egg mixture and cook, stirring occasionally, until the eggs are set but still slightly moist, about 3-4 minutes. (5 minutes)

Combine the egg and vegetable mixtures in one of the skillets and season with salt and pepper to taste. (2 minutes)

Wipe one of the skillets clean with a paper towel. Warm each tortilla in the skillet over low heat for about 30 seconds per side, until pliable. (8 minutes)

Lay each tortilla on a sheet of aluminum foil. Sprinkle about 1 tablespoon of the remaining shredded cheese in the center of each tortilla, followed by about 1/2 cup of the egg and vegetable filling. (5 minutes)

Fold in the sides of the tortilla, then roll it up tightly from the bottom. Wrap each burrito securely in the aluminum foil. (5 minutes)

Place the wrapped burritos in a large zip-top bag and freeze for up to 3 months.

For optimal flavor, consider adding a pinch of cumin or chili powder to the vegetable mixture.
If you prefer a spicier burrito, leave the seeds in one or both jalapenos.
To reheat, microwave a frozen burrito for 2-3 minutes, or bake in a preheated oven at 350°F (175°C) for 20-25 minutes.
