For a deeper flavor, use kimchi that is very well-fermented and slightly sour. Dashi (Japanese soup stock) adds a layer of umami richness to the stew. If you don't have dashi, water works just fine. Adjust the amount of gochujang to your preference. Start with a smaller amount and add more to taste if you like it spicier. Feel free to add other vegetables to the stew, such as sliced onions, scallions, or zucchini. Kimchi Jigae is traditionally served with rice and an assortment of Korean side dishes (banchan).
