Cook the pasta according to package directions, omitting salt. (Approximately 8-10 minutes)

While the pasta cooks, in a small bowl, combine the ricotta cheese, Parmesan cheese, water, and pepper. Mix well and set aside.

Heat a large skillet over medium-high heat. Add the Italian sausage and chopped yellow onion. Cook for 3 to 5 minutes, or until the sausage is crumbled and the onion is tender. Be sure to stir occasionally to ensure even cooking. Drain any excess grease.

Add the undrained diced tomatoes, tomato paste, 3/4 cup of the mozzarella cheese, and the cooked pasta to the skillet. Stir well to combine all ingredients evenly.

Dollop spoonfuls of the ricotta mixture evenly over the top of the pasta mixture.

Sprinkle the remaining mozzarella cheese over the entire surface of the skillet.

Reduce the heat to low, cover the skillet, and cook for 2 to 3 minutes, or until the ricotta mixture is heated through and the mozzarella cheese is melted and bubbly. Remove from heat and let stand for a minute before serving.
For an extra layer of flavor, consider adding a pinch of red pepper flakes to the sausage while it's cooking.
Feel free to substitute ground turkey or chicken for the Italian sausage for a leaner option.
If you don't have bowtie pasta, penne or rotini work well as substitutes.
Fresh basil leaves, chopped and sprinkled on top just before serving, add a bright, aromatic finish.
