Follow The Directions

01

Step
15 mins

Prepare Jars: Thoroughly inspect four pint-sized jars and their rings for any damage. Discard any defective ones. Submerge the jars in simmering water to sterilize them; keep them in the hot water until ready to fill. Wash new, unused lids and rings in warm, soapy water. (Prep time: 15 minutes)

02

Step
5 mins

Combine Ingredients: In a large, heavy-bottomed stockpot, combine the crushed huckleberries and sugar. Stir well to ensure the sugar is evenly distributed. (Prep time: 5 minutes)

03

Step
20 mins

Cook the Jam: Bring the mixture to a rolling boil over medium-high heat, stirring constantly to prevent scorching. Once boiling, stir in the powdered fruit pectin. Continue to boil, stirring constantly, for exactly 1 minute. (Cook time: 20 minutes)

04

Step
10 mins

Skim and Fill: Remove the pot from the heat. Use a metal spoon to carefully skim off any foam that has formed on the surface. Pack the hot jam into the sterilized jars, leaving about 1/4 inch of headspace at the top. (Prep time: 10 minutes)

05

Step
5 mins

Remove Air Bubbles and Seal: Gently run a clean knife or a thin spatula around the inside of each jar to release any trapped air bubbles. Wipe the rims of the jars with a clean, moist paper towel to remove any residue. Place the lids on top of the jars and screw the rings on tightly, but not too forcefully. (Prep time: 5 minutes)

06

Step
20 mins

Process in Boiling Water Bath: Place a rack in the bottom of a large stockpot and fill it halfway with water. Bring the water to a boil. Carefully lower the filled jars into the boiling water using a jar lifter, ensuring they are at least 2 inches apart. Add more boiling water, if needed, to cover the jars by at least 1 inch. Bring the water back to a rolling boil, cover the pot, and process for 5 minutes. (Cook time: 20 minutes)

07

Step
24 hrs

Cool and Check Seals: Carefully remove the jars from the stockpot using a jar lifter and place them on a towel-lined surface, several inches apart. Let the jars cool completely, undisturbed, for 24 hours. After 24 hours, check the seals by pressing down on the center of each lid. If the lid doesn't flex or make a popping sound, the jar is properly sealed. (Cooling time: 24 hours)

08

Step
0 mins

Store: Store the sealed jars of huckleberry jam in a cool, dark place for up to one year.

For a smoother jam, you can strain the crushed huckleberries through a cheesecloth before cooking.
Adjust the amount of sugar to your liking, depending on the sweetness of the huckleberries.
If you don't have huckleberries, feel free to substitute with blackberries, raspberries, or a mix of berries.
Make sure the jars are properly sealed to prevent spoilage.

I found that reducing the sugar by about a cup still resulted in a wonderfully sweet jam. Definitely recommend this recipe!
