Sauté the Aromatics: In a large skillet, melt the butter over medium heat. Add the diced celery and onion, and sauté until softened and translucent, about 5-7 minutes. Pour in the water or chicken broth and bring to a simmer. (10 minutes)

Combine and Hydrate: Pour the celery and onion mixture over the seasoned bread cubes. Add the dried cranberries and sunflower seeds. Gently mix everything together, ensuring the bread absorbs the moisture evenly. If the mixture seems too dry, add a little more broth. (5 minutes)

Bake or Stuff: For baking, transfer the dressing to a buttered casserole dish. Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-20 minutes, or until golden brown and heated through. Alternatively, use the dressing to stuff a turkey or chicken before roasting. (40 minutes)

For a richer flavor, use chicken broth instead of water to moisten the bread.
