In a large stockpot or Dutch oven, melt the butter over medium heat. Add the diced onions, bacon, and bay leaf. Cook, stirring occasionally, until the onions are softened and translucent, and the bacon is lightly browned (approximately 5-7 minutes).

Pour in the chicken broth, then add the diced potatoes, flour, marjoram, caraway seeds, salt, and pepper. Stir well to combine, ensuring the flour is fully dissolved. (1 minute)

Bring the soup to a boil, then reduce the heat to low, cover, and simmer until the potatoes are tender and easily pierced with a fork (approximately 20 minutes).

Remove the pot from the heat and stir in the sour cream until well combined. Return to low heat and cook for another 1-2 minutes, being careful not to boil, as this can cause the sour cream to curdle.

For a smoother soup, use an immersion blender to partially blend the soup before adding the sour cream. Be careful not to over-blend; some chunks of potato and bacon are desirable for texture.
If you don't have caraway seeds, you can substitute with a pinch of celery seeds or fennel seeds.
Adjust the amount of salt and pepper to your taste. Remember that the bacon and chicken broth already contain salt.
