Place potatoes in a large pot and cover generously with cold, salted water. Bring to a rolling boil over high heat. (5 minutes)

Reduce heat to medium-low and simmer gently until potatoes are fork-tender, about 15-20 minutes. A knife should easily slide into the center of a potato cube.

Drain potatoes thoroughly in a colander. Return potatoes to the now-empty pot.

Using a potato ricer or masher, mash potatoes until smooth and creamy. Avoid over-mashing, which can result in gluey potatoes.

Gently warm the milk in a separate small saucepan or in the microwave. This prevents the potatoes from cooling down too much when the milk is added.

Stir in warm milk, feta cheese, butter, minced garlic, oregano, and rosemary. Mix until well combined and the feta is evenly distributed. (3 minutes)

Season generously with salt and freshly ground black pepper to taste. Remember that feta cheese is already quite salty, so adjust accordingly.

Serve immediately and garnish with a sprinkle of fresh herbs (such as parsley or chives) or a drizzle of olive oil, if desired.

For an extra touch of richness, consider using half-and-half or cream instead of milk.
Fresh herbs can be substituted for dried herbs. Use about 1 tablespoon of fresh herbs for every 1 teaspoon of dried herbs.
Roasting the garlic before mincing will impart a sweeter, more mellow flavor to the mashed potatoes. Toss garlic cloves with olive oil and roast at 400°F (200°C) for 20-25 minutes, or until soft and golden brown.
To keep mashed potatoes warm for serving, place them in a heatproof bowl set over a pot of simmering water (double boiler).
