In a large stock pot, brown beef ribs over medium heat on all sides. (Approximately 15 minutes). Cover with water, bring to a boil, then reduce heat to a simmer, cover, and cook for 1 hour.

Remove meat and bones to a cutting board to cool. Add sliced onions, beef broth, and salt to the rib water in the pot. Bring to a boil, then reduce heat and simmer for 1 hour.

Once the bones are cool enough to handle, carve the meat from the bones. Finely chop the meat and return it to the soup.

After an hour of simmering, season the soup with the liquid seasoning, salt, and pepper to taste. Simmer for an additional 30 minutes to allow the flavors to meld.

Preheat oven broiler to high.

Cut French bread slices to fit inside your serving bowls. Place slices on a baking sheet and brush with melted butter. Sprinkle with garlic powder and paprika. Broil until golden brown and crispy, (2-10 minutes, watch carefully to prevent burning).

Ladle soup into 6 oven-proof serving bowls. Top each with a seasoned crouton and sprinkle generously with mozzarella cheese. Place bowls on a sturdy baking sheet and broil until the cheese is melted and bubbly, (about 1 minute). Serve immediately.

For a deeper flavor, consider caramelizing the onions slowly in butter before adding them to the broth.
