In a large bowl, toss the sliced steak with cornstarch until evenly coated. (2 minutes)

In a separate small bowl, whisk together the soy sauce and sugar until the sugar is dissolved. Pour the mixture over the steak, mix well, and marinate in the refrigerator for at least 2 hours, or preferably overnight, for maximum flavor. (5 minutes)

Heat 1 tablespoon of olive oil in a large skillet or wok over medium heat. Add the chopped onion and crushed garlic, and cook, stirring occasionally, until softened and fragrant, about 5-7 minutes. Stir in the oyster sauce, and season with salt and pepper to taste. (7 minutes)

Add the snow peas, green peas, sliced carrot, thinly sliced celery, and red bell pepper chunks to the skillet. Cook and stir until the vegetables are crisp-tender, about 7-10 minutes. Remove the vegetables from the skillet and set aside. (10 minutes)

Remove the steak from the marinade, shaking off any excess liquid (discard the marinade). (1 minute)

Heat the remaining 2 tablespoons of olive oil in the same skillet over medium-high heat. Add the marinated steak to the hot skillet and stir-fry to your desired degree of doneness, about 3-5 minutes per side for medium. (5 minutes)

Return the cooked vegetables to the skillet with the steak. Mix well to combine and cook until heated through, about 1-2 minutes. (2 minutes)

Serve hot, either on its own or over steamed rice.

For a spicier kick, add a pinch of red pepper flakes to the marinade or stir-fry.
Feel free to substitute other vegetables like broccoli florets, mushrooms, or bok choy based on your preference and availability.
Marinating the beef overnight will result in a more flavorful and tender stir-fry. If you're short on time, even a 30-minute marinade will make a difference.
If using frozen vegetables, add them to the skillet directly from frozen to prevent them from becoming too soft.
Serve immediately for the best flavor and texture.
