For best results, use a kitchen scale to measure the ingredients accurately. Do not open the oven door during the initial baking period, as this can cause the eclairs to deflate. If you don't have a piping bag, you can use a large zip-top bag with one corner cut off. The filling can be made a day in advance and stored in the refrigerator. Store leftover eclairs in an airtight container in the refrigerator.
