For an even richer flavor, try searing the roast in bacon fat instead of vegetable oil. If you prefer a thicker gravy, remove the roast and vegetables after cooking and whisk 1 tablespoon of cornstarch with 2 tablespoons of cold water. Stir the slurry into the remaining liquid in the pressure cooker and simmer until thickened. Feel free to add other vegetables such as celery, parsnips, or turnips to the pot roast.
