Follow The Directions

01

Step

In a large pot or Dutch oven, heat olive oil over medium-high heat until shimmering. Add celery, carrots, and onion. Cook, stirring frequently, until onion begins to soften and turn translucent, about 4 minutes. Add garlic and stir until fragrant, about 30 seconds.

02

Step

Add vegetable broth, marinara sauce, tomato paste, and Italian seasoning. Stir well to combine. Bring to a boil. Reduce heat to medium-low and simmer gently, uncovered, until carrots are tender, about 10 minutes.

03

Step

Add pasta and zucchini. Cook until pasta is tender, about 10 minutes. Stir in beans, kale, salt, and pepper. Remove from heat and allow soup to cool slightly before serving.

04

Step

Spoon into individual bowls and garnish generously with Parmesan cheese. A swirl of pesto or a drizzle of olive oil can further enhance the flavors.

For a richer flavor, use homemade vegetable broth.
Feel free to substitute other vegetables like green beans, spinach, or potatoes based on your preference and availability.
If you don't have small shell pasta, any small pasta shape will work well.
For a vegetarian option, ensure your Parmesan cheese is vegetarian-friendly.
This soup tastes even better the next day, as the flavors meld together beautifully.
