For a richer flavor, try using bacon grease instead of grapeseed oil. Smoked sausage, andouille, or even kielbasa make excellent additions to this dish. Adjust the amount of Cajun seasoning to your preference. Start with less and add more to taste. Adding a splash of apple cider vinegar towards the end of cooking can brighten the flavors. This dish is best served immediately, but leftovers can be stored in the refrigerator for up to 3 days.
