Feel free to experiment with different types of smoked sausage. Kielbasa or chorizo would also be delicious.
If you don't have fresh parsley on hand, you can substitute 1 tablespoon of dried parsley, but fresh is preferred.
This cassoulet tastes even better the next day, as the flavors have time to meld together. It's perfect for meal prepping or making ahead for a dinner party.
