In a large Dutch oven, heat olive oil over medium-high heat. Add squash, onion, bell pepper, and carrot. Cook, stirring often, until onion is translucent, about 5 minutes.

Stir in curry paste, paprika, and 1 1/2 teaspoons salt; continue cooking, stirring frequently, until vegetables are beginning to soften, about 5 minutes.

Pour in vegetable broth, cover, and bring to a boil. Reduce heat to medium and simmer, stirring occasionally, until vegetables are very soft, about 15 minutes.

Remove from heat and use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer soup to a blender in batches, securing the lid and venting steam. Blend until smooth, about 1 minute per batch.

In a small bowl, using a hand mixer with a whisk attachment, beat heavy cream, lemon juice, and remaining salt on high speed until soft peaks form, about 45 seconds to 1 minute.

Serve soup in wide bowls, garnished with a dollop of lemon cream, a sprinkle of pepitas and parsley, and a drizzle of olive oil.

For a vegan option, substitute the heavy cream with coconut cream and ensure your vegetable broth is vegan-friendly.

Roasting the patty pan squash beforehand can deepen its flavor profile.
