Follow The Directions

01

Step

In a medium saucepan, combine the light cream, chopped chocolate, and sugar. (2 minutes)

02

Step

Heat over medium heat, stirring constantly with a whisk, until the chocolate is completely melted and the mixture is smooth and glossy. Be careful not to let the mixture boil. (5-7 minutes)

03

Step

In a separate medium bowl, gently whisk the egg yolks until lightly beaten. (1 minute)

04

Step

Gradually pour a small amount of the hot chocolate mixture into the beaten egg yolks, whisking constantly to temper the eggs and prevent them from scrambling. (2 minutes)

05

Step

Pour the tempered egg yolk mixture back into the saucepan with the remaining chocolate mixture. (1 minute)

06

Step

Heat gently over low heat, stirring constantly with a whisk, until the custard thickens slightly and coats the back of a spoon. Be careful not to overheat the custard, as it can curdle. (3-5 minutes)

07

Step

Remove from heat and stir in the vanilla extract. (1 minute)

08

Step

Spoon the Creme Au Chocolat into small dessert bowls or ramekins. (2 minutes)

09

Step

Cover with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming. (1 minute)

10

Step

Refrigerate for at least 2 hours, or preferably overnight, to allow the custard to chill and set completely. (120+ minutes)

11

Step

Before serving, garnish with a dollop of freshly whipped cream.

For an even richer flavor, use dark chocolate with a high cocoa content.
If you don't have whipped cream on hand, a sprinkle of cocoa powder or chocolate shavings also makes a lovely garnish.
For a smoother consistency, strain the custard through a fine-mesh sieve before chilling.
