For best results, chill the dough for at least an hour before rolling. This prevents the cookies from spreading too much during baking. If the dough becomes too sticky while rolling, lightly dust with flour. Store decorated gingerbread cookies in an airtight container at room temperature for up to a week. To make gingerbread ornaments, poke a hole in the top of each cookie before baking. After baking and cooling, thread ribbon or twine through the hole for hanging.
