Step

In a large pot or Dutch oven, melt the butter over medium-low heat. (2 minutes)

Add the thinly sliced onion and sauté until translucent and softened, about 8-10 minutes.

Add the chopped celery and vegetable broth (or water). Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 30 minutes, or until the celery is very tender.

Remove from heat and stir in 2 1/2 ounces of the crumbled Stilton cheese until melted and well combined.

Carefully transfer the soup to a blender or use an immersion blender to puree until smooth. Return the pureed soup to the pot.

Season with freshly ground black pepper and salt to taste. Remember that Stilton cheese is naturally salty, so adjust the seasoning accordingly. (2 minutes)

Ladle the soup into individual bowls, garnish with the remaining crumbled Stilton cheese and a sprig of fresh watercress. Serve immediately.

For a richer flavor, use chicken broth instead of vegetable broth.
If you don't have watercress, a sprinkle of chopped parsley or chives works well as a garnish.
The soup can be made ahead of time and reheated. Add the remaining Stilton and garnish just before serving.
For a smoother soup, strain it through a fine-mesh sieve after pureeing.
