Use a light-colored saucepan to better monitor the color of the butter as it browns. Sifting the confectioners' sugar ensures a smooth, lump-free frosting. For a salted brown butter frosting, add a pinch of sea salt to the butter while browning. Allowing the browned butter to cool slightly before adding the confectioners' sugar can prevent the frosting from becoming too liquid. This frosting is best used immediately, but can be stored in an airtight container in the refrigerator for up to 3 days. Bring to room temperature and re-whip before using.
