Follow The Directions

01

Step

Bring a large pot of lightly salted water to a rolling boil. Add spaghetti and cook, stirring occasionally, until al dente, about 12 minutes.

02

Step

While the pasta cooks, heat a large skillet over medium-low heat. Add bacon and cook, stirring occasionally, until crisp and golden brown, 5 to 6 minutes. Transfer bacon to a paper towel-lined plate using a slotted spoon, reserving 1 tablespoon of bacon fat in the skillet.

03

Step

Add asparagus to the skillet with the bacon fat and sauté until tender-crisp and lightly browned, about 3 minutes. Add minced garlic and cook until fragrant, about 30 seconds. Transfer asparagus and garlic to the plate with the bacon.

04

Step

In a small bowl, whisk together the majority of Parmesan cheese (reserve 2 tablespoons for garnish), egg yolks, Greek yogurt, salt, and freshly ground black pepper until smooth and well combined.

05

Step

Drain the spaghetti, reserving about 3/4 cup of the pasta cooking water. Return the spaghetti to the pot. Immediately add the egg yolk mixture and toss vigorously for 1 minute to coat the pasta evenly. Return the pot to low heat and cook, stirring constantly and adding reserved pasta water as needed to achieve a creamy consistency, 1 to 2 minutes.

06

Step

Remove the pot from the heat. Pour in the half-and-half and stir well to incorporate. Gently fold in the crispy bacon and the asparagus mixture until evenly distributed.

07

Step

Serve immediately, garnished with the reserved Parmesan cheese and freshly chopped parsley.

For an even richer flavor, use pancetta instead of bacon.
Ensure the egg yolks are at room temperature for a smoother sauce.
Adjust the amount of reserved pasta water to achieve your desired sauce consistency.
Serve immediately to prevent the sauce from becoming too thick.
