For a vegetarian option, omit the fish sauce and add a splash of rice vinegar for brightness.
Adjust the amount of soy sauce and fish sauce to your taste preference. Start with less and add more as needed.
Ensure Brussels sprouts are dry before roasting to promote browning. If they are wet, they will steam instead of roast.
If you like a little heat, add a pinch of red pepper flakes to the skillet along with the sesame oil.
