Heat olive oil in a large saucepan or Dutch oven over medium heat. Add chopped green onions and sauté until softened and fragrant, about 5 minutes.

Add the thawed peas, crushed tomatoes, potato wedges, and chopped dill to the saucepan. Season generously with salt and pepper. Stir to combine.

Add ½ cup of water, or enough to almost cover the vegetables. Bring the mixture to a boil, then reduce heat to low, cover partially, and simmer for about 30 minutes, or until the peas and potatoes are tender and the sauce has thickened.

Check the stew periodically and add more water if needed to prevent sticking. The goal is a thick, luscious sauce with very little excess liquid. (5 minutes)

Before serving, taste and adjust seasoning as needed. The flavors should be bright and balanced. (2 minutes)

For an extra layer of flavor, add a clove of minced garlic along with the green onions.
If fresh dill isn't available, you can use 1-2 tablespoons of dried dill. Add it at the same time as the tomatoes.
This dish is even better the next day, as the flavors have time to meld together. Reheat gently before serving.
Serve with a generous drizzle of extra virgin olive oil, a sprinkle of fresh dill, and a side of crusty bread for dipping.
