Follow The Directions

01

Step
5 mins

In a medium bowl, whisk together the flour, baking soda, cinnamon, and baking powder. (Prep time: 5 minutes)

02

Step
7 mins

In a separate large bowl, cream together the softened butter, apple cider drink mix, sugar, and salt until light and fluffy using an electric mixer. (Prep time: 7 minutes)

03

Step
3 mins

Beat in the eggs one at a time, then stir in the vanilla extract. (Prep time: 3 minutes)

04

Step
5 mins

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. (Prep time: 5 minutes)

05

Step
1 hrs

Cover the dough and refrigerate for at least 1 hour to allow the flavors to meld and the dough to firm up. (Refrigeration time: 60 minutes)

06

Step
10 mins

Preheat oven to 350 degrees F (175 degrees C). Line two baking sheets with parchment paper. (Prep time: 10 minutes)

07

Step
5 mins

Microwave caramels in a microwave-safe bowl until softened, about 20 seconds. Flatten caramels using the bottom of a glass. (Prep time: 5 minutes)

08

Step
5 mins

Scoop the chilled cookie dough into balls about 1 tablespoon each. (Prep time: 5 minutes)

09

Step
15 mins

Flatten each ball slightly in your palm. Sandwich a caramel between two pieces of dough, pinching the edges to seal completely. (Prep time: 15 minutes)

10

Step
5 mins

Place the assembled cookies about 2 inches apart on the prepared baking sheets. (Prep time: 5 minutes)

11

Step
13 mins

Bake in the preheated oven for 12-14 minutes, or until the edges are very lightly browned. (Bake time: 12-14 minutes)

12

Step
15 mins

Slide parchment off of the baking sheet, onto your counter. Let cookies cool on the parchment. (Cooling time: 15 minutes)

For a deeper apple flavor, add 1/2 cup of finely diced apple to the dough.
If you don't have caramel bits, you can use caramel squares, unwrapped and quartered.
Make sure to seal the edges of the cookies well to prevent the caramel from leaking out during baking.
These cookies are best enjoyed warm, when the caramel is still gooey!

The caramel leaked a bit during baking, but they still tasted amazing. Next time, I'll make sure to seal them better.

  • Joshua Koepp

The dough was a little sticky, but the end result was totally worth it! I'll definitely be making these again.

  • Magnus Sipes

I added a pinch of nutmeg to the dough for an extra touch of spice. Delicious!
