Prepare the Protein: Heat vegetable oil in a medium saute pan over medium-high heat. Add the plant-based protein crumbles and cook until browned and heated through, about 5 minutes. Remove from pan and set aside.

Sauté the Onions: Add diced onion to the same pan and cook until translucent and softened, about 5 minutes. Return the cooked protein crumbles to the pan, add 2 tablespoons of Worcestershire sauce, and mix well to combine. Set aside.

Assemble the Quesadillas: Wipe out the pan and coat it with cooking spray. Heat over medium heat. Place one tortilla in the pan. Sprinkle half of the tortilla with 1/2 cup of cheddar cheese, followed by half of the cooked protein and onion mixture. Top with dill pickle slices (if using) and another 1/2 cup of cheddar cheese.

Cook the Quesadillas: Fold the tortilla in half and cook until the cheese is melted and the quesadilla is golden brown on one side, about 2-3 minutes. Flip and cook the other side until golden brown, about 1-2 minutes more. Repeat with the second tortilla and remaining ingredients.

Make the Special Sauce: In a small bowl, whisk together mayonnaise, ketchup, pickle juice, yellow mustard, and 1 teaspoon Worcestershire sauce. Season with salt and pepper to taste.
